There is something sinful about having your own little cake, or having a selection of little cakes to share with that special someone. This year for Valentine’s Day, the Co-op hosted a cupcake swap and contest. There were two categories: the first was for employees of the UConn Co-op and of Dining Services, and the second was for all other customers. Anyone could enter their favorite recipe; all they had to do was to bake two dozen cupcakes, and bring them in to be swapped and judged. There were a total of four employee entries and five customers. Some of the entries are pictured above.
Our Judges, shown above were Ethan and Meghan, both of whom work with Dining Services on campus. They are shown with the employee entries. From left to right these are: chewy chocolate brownie cupcakes with peanut butter frosting, moist chocolate cupcakes with peanut butter/butter cream frosting, dark chocolate cupcakes with raspberry frosting, and our employee winner, banana cupcakes with honey cinnamon frosting and chocolate hearts.
At the conclusion of our contest we swapped out cupcakes, with everyone who entered being able to take home two of each cupcake entered. Pictured above from left to right are: Sarah Rose (who works in the supplies department and was our employee winner), myself, Kelly Aceto (the 1st place winner in the customer category for her chocolate cupcakes with raspberry filling and chocolate raspberry swirled frosting and a chocolate heart on top), Sharon Ristau (also an employee of the Co-op), and Kelly’s son.
Our 2nd place winner in the customer category (not pictured, sorry) was Carla Curran with her delicious white cupcakes with white chocolate Chambord filling & whipped cream frosting with little candy hearts on top.
The event was a success and we had a wonderful time. There was quite a variety of cupcakes entered and all were delicious. Thank you to everyone who participated and we look forward to the possibility of doing another baking contest in the future.
